Università degli Studi di Cagliari and SUS-MIRRI were present at EFFOST2023 Conference in Valencia, Spain (6-8 November 2023, 37th EFFoST International Conference 2023, Sustainable Food and Industry 4.0: towards the 2030 Agenda).
The preliminary results of the poster titled “Compositional, nutritional, and microbial characteristics of fermented sausages produced with quail meat and autochthonous starters“ show that the use of quail meat and autochthonous starter cultures could represent a suitable alternative for producing innovative healthier and typical meat products.
